Modelo de producción basado en los pilares de la industria 5.0 para la agroindustria de tisanas: utilizando una revisión sistemática
Resumen
La agroindustria de tisanas, en crecimiento dentro del sector alimentario enfrenta desafíos constantes relacionados con la eficiencia productiva, el uso sostenible de los recursos y el bienestar de su fuerza laboral. Este articulo busca proponer un modelo de producción basado en los pilares de la Industria 5.0 (sostenibilidad, enfoque en el ser humano y resiliencia), adaptado a toda la cadena agroindustrial, desde el cultivo hasta el almacenamiento. Para respaldar este objetivo, se realizó una revisión sistemática siguiendo la metodología Fink, analizando 70 artículos científicos publicados entre 2020 y 2025. La revisión destaco modelos teóricos clave, como la economía circular, el análisis multicriterio y el modelo bioeconómicos, que ofrecen fundamentos conceptuales para cada pilar. Además, se identificaron elementos esenciales, como las tecnologías limpias, los procesos inteligentes y los principios de desarrollo humano, todos orientados al fortalecimiento del sector. Como resultados, se desarrolló un modelo teórico que integra cada pilar de la Industria 5.0 en un marco coherente adaptado a las realidades del sector. El estudio concluye que la implementación de dicho modelo ofrece una vía estratégica para transformar el sector en uno más sostenible, centrado en las personas y resiliente, contribuyendo a su desarrollo a largo plazo.
